'All food is political': Chef Fadi Kattan on preserving Palestinian cuisine. Bethlehem is a storied city: The biblical birthplace of Jesus, known in our culture as the little town of Christmas. But as a city in the occupied West Bank, less than 10 kilometres from Jerusalem – Bethlehem now sits in the shadow of the Israel-Hamas war. Residents have their movements restricted by Israeli checkpoints and face fears of violence in their communities. Fadi Kattan is a Franco-Palestinian chef from Bethlehem. He speaks with Piya Chattopadhyay about seeing war and geopolitics through the lens of food, and what it means to preserve his culinary culture with his new cookbook Bethlehem: A Celebration of Palestinian Food.
